Am I correct in thinking that IA's preferred approach in this situation is for me to create a completely separate object for the .mp3, so you wind up with one record for the video and one record for the audio, which are unconnected to each other?

Not necessarily. I've seen people who upload video sermons often tuck an audio-mp3 version into the item, and that seems to work pretty well.
